The following options exist:
Sending an encrypted E-Mail. Only you and the recipients can read the E-Mail content.
Sending an E-Mail with a signature. The signature ensures that the recipient is able to recognize whether the E-Mail content has been changed on the transport.

How to send an encrypted E-Mail:
Compose an E-Mail in the E-Mail app as usual.
In the Compose page, click the icon on the upper right side.
You can also click on Guard security settings, the menu contains different entries:
